Easy to Make Veggie Frittata

Veggie Frittatas are AWESOME because you can make them just how you like them, plus it gets the kids eating veggies that they normally wouldn't eat.
Still not convinced? Michael Pollan calls Veggie Frittatas the "easiest, tastiest, cheapest, and most nutritious meal anyone can make. " (http://michaelpollan.com/books/cooked/any-veggie-frittata-recipe/)

Here's what you need: A cupcake tin, cupcake liners, eggs, whole milk and desired ingredients such as; onion, broccoli, asparagus, bell pepper, mushrooms, thyme, basil, sage, and the list continues. Of course you can add treats like cheese and ham, or bacon, just keep in mind to do so in moderation :)

You will need to account for how many people you are serving. A good rule of thumb for eggs is using one egg per person. So if there are 4 people you are cooking for, use 4 eggs. etc.

Here's how it looks:

Put all your favorite ingredients in, add eggs and milk (1 cup milk for every 2 eggs) and bake in the oven at 350 for 30-45 min. These are awesome to make for a large group who is picky, or to have leftovers for next mornings breakfast. Enjoy!
