Stuffed Bell Peppers

Stuffed Bell Peppers



Ingredients:
- 1 lb. bison or turkey (optional)
-2-3 bell peppers (one per person)
-2 carrots, chopped
-2 cups kale, chopped
-1 large yellow onion
-4-5 mushrooms
-1 cup cooked quinoa or rice
-Salt, cumin and pepper to taste

Directions:
-First, cook the grains and saute all the remaining ingredients until soft.
Combine the grains with the cooked ingredients.
Cut bell peppers in half, taking out the inner lining.
Spoon cooked ingredients into the bell pepper.
Bake at 375 for 30 minutes. Top with cheese if you wish. Enjoy!
