Stuffed Bell Pepper Soup



Stuffed Pepper Soup Recipe 

1 lb. lean ground turkey (leave this out for V, or add beans)
1 cup diced onion
2 cups rice
1/2 tsp. basil
1/2 tsp. oregano
14 oz. diced tomato
15 oz. can tomato sauce
2 cups chopped bell pepper (assorted variety)
3 cups water or broth

*Make sure you brown the meat and saute the onion BEFORE you put it in the crockpot*

After the saute-ing, throw it all in the crockpot, and set on low for 6-8 hours 
The smell of the soup will tell you it is finished. Make it for the family tonight OR as lunch for the rest of the week!
