Vegetarian Pizza



Does this look yummy or what?
 
Let me tell, you my boyfriend and I couldn't get enough!
 
Want to know how to make it? 

Good! Because it's loaded with nutrients that are way good for you, 
so you don't feel guilty if you eat every last bite!

Best part is, it's so good that the meatlover in your family won't even notice there's none! Tricky...


Vegetarian Pizza

Ingredients:
-1  Foccacia Bread, cut into 4 pieces
-Mushrooms, 2 cups chopped
-Eggplant, 1 cup chopped
-Cheese, 2 cups, shredded
-Spinach, 1 handful
-Kale, 1 bunch, chopped
-Olive Oil

Step 1: Preheat oven to 350, prepare ingredients
 
Step 2: Pan fry mushrooms and eggplant on oil until light brown
 
Step 3: Lay out spinach on top of foccacia bread. Since there were 2 of us, I only used 2 of the 4 pieces of bread, (leaving the rest for another recipe). 

Step 4: Sprinkle the shredded cheese on top of the spinach.

Step 5: Place sauteed mushrooms and eggplant on top of the pizza.

Step 6: Place chopped kale on top, then drizzle olive oil on top, and place in the oven

Step 7: Bake for 20-30 minutes, checking every 10

Step 8: When its done, kale should be slightly crispy to the touch, and cheese should be melted.

Step 9: Add a dash of sea salt on top

Step 10: Sit down with a loved one, and enjoy!
