Quinoa and Fiber

This post is dedicated to Quinoa.

What's so special about this middle eastern grain?

It's the only grain that makes a full protein.

SO, when you are looking for a dish to prepare and are limited on your meat selection, substituting in quinoa is an excellent choice. It will also give you more beneficial nutrients like fiber. Did you know you should be eating about 25-50 grams of fiber per day? A standard apple contains on about 5. You've got work to do!

First I wanted to share with you this website I found with 22 different quinoa recipes:

Also, here is a list of the highest fiber containing foods (notice how corn and beans are at the top!)

On a side note, quinoa contains 3 grams of fiber per 1/4 cup. Not bad!

Have your goal for this week to be to increase your fiber intake by incorporating more vegetables and grains in your diet. Also, if you're going shopping, buy some quinoa and try a recipe or two!
